Recipe
​
This is a really simple recipe full of flavour and exciting textures for little mouths.  Chickpeas are a great source of fiber and protein, they also contain key nutrients such as iron, folate, phosphorus, copper, and manganese.
These are nice on their own but for older babies they go well with wholemeal pitta bread, hummus, tahini or yoghurt and cucumber dip.

Ingredients 

  • ​380g box organic chickpeas/ 400g tin chickpeas (approx 100g dried)

  • 3 garlic cloves, crushed or chopped

  • 2 tsp ground coriander

  • 2 tsp ground cumin

  • 1 small red or white onion chopped

  • Juice of half a lemon

  • 1 tbsp of any plain flour (I use buckwheat)

  • 2 tbsp fresh parsley, chopped

  • Avocado oil for frying

Method
  1. Rinse and drain chickpeas (unless they are dried then following cooking instructions).
  2. Combine chickpeas with garlic, ground spices, onion, lemon juice then blend or mash depending on your preferred consistency. 
  3. Mix in the flour and parsley until well combined.
  4. Wet your hands and squeeze mixture into 12 small patties (if you have time, leave in the fridge for 30 mins to firm up)
  5. Heat oil in a frying pan on medium heat, once hot add patties to the pan, cooking for 2-3 minutes on each side until crisp
  6. Transfer to a plate and allow them to cool before giving to your little one to enjoy.
